Mr Boulanger's regular menu is detailed in The History of Kitchens and Cooks, which states firmly that "Boulanger offered salty fowl and fresh eggs, all displayed without a tablecloth on little marble tables." Several critics have also mentioned the alleged restaurant owner's strange practice of soliciting business outside his eatery while costumed in noble garb and wielding a sword.
